Vegan in Vegas: Crossroads Kitchen rolls the dice

Crossroads Kitchen chef Tal Ronnen has expanded his high-end plant-based flagship restaurant in West Hollywood with two new concepts in Las Vegas.
Carrefour Cuisine and CB | Crossroads Burgers officially opened to the public at Resorts World Las Vegas on May 28. Crossroads Kitchen mirrors the original Melrose Avenue location, while CB|Crossroads Burgers follows a fast-casual format.

“Our expansion into Resorts World Las Vegas underscores the growing appeal of plant-based cuisine,” said Ronnen – former personal chef to Oprah Winfrey and author of New York Times bestseller ‘The Conscious Cook’. – in a press release. “When Crossroads Kitchen opened in 2013, it was a rarity, the first all-vegan upscale restaurant with a full bar. Now, with our new locations, I am excited to continue shaping the perception of plant-based dining with Resorts World and serving delicious, fine dining that appeals to vegans and flexitarians.

Ronnen has lined up his concepts at a brand new location in Vegas. Developed by Genting Berhad, a publicly traded Malaysian company registered with the Nevada Gaming Commission, Resorts World Las Vegas offers 3,506 rooms and suites, a game room, food and beverage outlets, a 5,000-seat theater and a collection of designer shops and boutiques. .

The Vegas version of Crossroads seats 162 people and includes bar seating and a private dining room for up to 20 people. It features dark woods, dark red banquettes, dramatic lighting, and music that set the mood for vegan dinners at the original LA restaurant. Photographs by artist Neil Zlozower are also on display throughout the space.

Crossroads Kitchen offers customers the Mediterranean-inspired dishes of the original, and there are other specialty dishes exclusive to the Las Vegas location, such as Chestnut Foie Gras, made with roasted chestnuts and served with a cabernet demi-glace, grilled sourdough, a celery leaf, and grapes; and Chips and Caviar, waffle crisps served with a dollop of Kite Hill sour cream topped with seaweed-based caviar.

The Vegas version also features off-menu items from the Los Angeles location, such as spaghetti and meatballs, made with Impossible Meatballs; and Fettuccine Alfredo.
Crossroads Kitchen’s casual outpost, CB|Crossroads Burgers, serves custom veggie sausages, burgers, fries and sundaes from a quick-service counter. Guests have the option of dining in the 24-seat dining room, ordering takeout, or opting for delivery directly to their rooms or poolside cabanas through Resorts World’s On The Fly service.

Ronnen’s original Crossroads Kitchen is located at the corner of Melrose and Sweetzer Avenues, where the celebrity chef introduced his fine, plant-based restaurant featuring a Mediterranean-inspired menu in an elegant setting. Signature items – including artichoke oysters topped with kelp caviar; Caesar salad with house dressing; baked truffle potatoes; and spaghetti carbonara — helped the restaurant earn stardom that includes Beyonce and Lizzo.

Las Vegas will not be the end of the Crossroads expansion. This fall, a Crossroads Kitchen will open in Calabasas, becoming the first plant-based restaurant at The Commons at Calabasas, the 215,000 square foot mall operated by Caruso. The menu will include stuffed zucchini flowers, beetroot tartare and homemade pasta such as tagliatelle Bolognese and fettuccine and truffles.

The new location is sure to attract Calabasas-based celebrities like the Kardashians, who have flirted with plant-based diets. Blink 182 drummer Travis Barker — a lifelong vegan who just married Kourtney Kardashian — is a Crossroads partner.
